Ben's Honey Blueberry Muffins
This is a recipe I created for making Honey Blueberry Muffins. You'll find no story here about their creation. Straight on to the good stuff!
Ingredients
Dry Ingredients ("the dry team")
- 219 g of Flour
- 1 tsp Baking Powder
- ½ tsp Baking Soda
- ½ tsp Salt
- ¼ tsp Cinnamon
Wet Ingredients ("the wet team")
- ⅓ cup Olive Oil
- ½ cup Orange Honey
- 2 Eggs at room temperature
- 1 cup Greek Yogurt (I like using "Honey Vanilla" flavored yogurt)
- 2 tsp Vanilla
Fruity Stuff
- 1 cup Blueberries
- 1 tsp Flour
Directions
- Set the oven to 400°F / 205°C
- Combine the "dry team" in large bowl
- In medium bowl, combine the "wet team"
- Beat the Eggs
- Add in the Olive Oil and Orange Honey
- Add in the Yogurt and Vanilla
- Add the "wet team" to the "dry team." Don't over mix, lumps are ok.
- Toss Blueberries in 1 tsp of Flour, fold into mix
- Bake for 16-19 minutes
